#1 Blueberry Muffins

These healthy blueberry muffins made with our Firebee Elderberry Honey will make breakfast on the go a little bit sweeter! 

Ingredients

Yields 12 Servings
  • 1 c. oats
  • 1/3 c. Firebee Elderberry Honey
  • 1 c. Greek yogurt
  • 2 Tbsp. oil
  • 1 1/2 Tbsp. buttermilk or regular milk
  • 1/2 Tbsp. vanilla extract
  • 1 large egg
  • 1 c. whole wheat flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 c. blueberries - do not defrost if frozen
  • 1 Tbsp. flour

Instructions

Step 1

In a large measuring bowl, combine the oats with the Firebee Elderberry Honey, Greek yogurt, oil, buttermilk, vanilla extract, and egg. Mix well and then set aside for 5-10 minutes. 

Step 2

While the oats are soaking, preheat the oven to 400 degrees Fahrenheit and line a 12 cup muffin pan with liners.

Step 3

Mix together the wheat flour, baking powder, baking soda, and salt very well. 

Step 4

Toss the blueberries with the 1 tablespoon of flour in a small bowl. 

Step 5

Combine the oat mixture with the flour mixture until just combined. Do not overmix. Add the flour coated blueberries to the batter and fold in. 

Step 6

Bake for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes in the pan and then transfer to a cooling rack.
