Apricot Chicken

The sauce for this, oh my goodness! If you make nothing else, make this sauce!!

Ingredients

Yields 4 servings
Sauce
  • 1 c. apricot jam
  • 1/4 c. onion, finely diced
  • 2 Tbsp. soy sauce
  • 1 Tbsp. Firebee Spicy Honey
  • 1 Tbsp. dijon mustard
  • 1 Tbsp. apple cider vinegar
  • 1 tsp. garlic, minced
  • 1 tsp. ginger, ground
  • 1/8 tsp. red pepper flakes
Chicken
  • 4 chicken thighs
  • salt & pepper to taste

Instructions

Step 1

Preheat the oven to 375 degrees and spray a baking dish with non-stick cooking spray. 

Step 2

To make the sauce. Add all the sauce ingredients in a medium sauce pan and heat until smooth, stirring frequently.

Step 3

Place the chicken in the prepared dish and sprinkle with salt and pepper. Bake for 20 minutes, uncovered.

Step 4

Use a spoon to baste the sauce over the chicken and bake for an additional 20-25 minutes or until the chicken registers 165 degrees on a meat thermometer.

Step 5

Allow the chicken to rest for about 5 minutes before serving. Use the extra sauce for mashed potatoes and to top the chicken.
