Asian Chicken Salad

A delicious salad made with an Asian flair! The marinade really gives the chicken a marvelous flavor, while the dressing takes it over the top! 

Ingredients

Yields 4 Servings
Marinade
  • 1 lb. chicken breasts
  • 1/4 c. soy sauce
  • 1 Tbsp. brown sugar
  • 2 Tbsp. rice vinegar
  • 1/2 tsp. salt
  • oil, for cooking
Dressing
  • 1/4 c. olive oil
  • 1/3 c. rice vinegar
  • 2 Tbsp. Firebee Raw Honey
  • 3 Tbsp. sesame oil
  • 2 tsp. soy sauce
  • 1/2 tsp. ground ginger
Salad
  • spring mix
  • 1/2 c. toasted, sliced almonds
  • 1 c. wonton strips
  • toasted sesame seeds

Instructions

Step 1

To make the marinade, add the 1/4 c. soy sauce, brown sugar, 2 Tbsp. rice vinegar, and 1/2 tsp. of salt to a large zipper bag. Shake to combine the marinade. Add in the chicken breasts and refrigerate for 1-2 hours.

Step 2

To make the dressing, add the olive oil, 1/3 c. rice vinegar, Firebee Raw Honey, sesame oil, 2 tsp. soy sauce, and ground ginger to a jar that has a tight fitting lid. Shake well and refrigerate until ready to use. 

Step 3

To cook the chicken, heat a large skillet over medium heat. Add oil to coat and cook the chicken for about 5-6 minutes per side, until a meat thermometer registers at least 165 degrees. Remove from heat and cut into slices.

Step 3

To assemble your salad, combine the spring mix, toasted almonds, wonton strips, and sesame seeds in a large bowl. Top with chicken strips and dressing. Serve immediately.
