BBQ Chicken Sheet Pan Meal
Who doesn't love a good sheet pan meal? This one can be thrown together quickly and put in the oven to cook while you tend to more important things. In less than an hour you've got a delicious, healthy meal for the whole family!
Ingredients
- 2 lbs. boneless, skinless chicken breasts, cut into cubes
- 1 c. Firebee BBQ Sauce
- 1 large onion, sliced
- 2 bell peppers, chopped
- 12 oz. pineapple chunks, drained
- 1 jalapeno, seeded and diced
- 1/2 tsp. salt
- 1/2 tsp. black pepper
Instructions
Step 1
Preheat oven to 400 degrees Fahrenheit. Coat a sheet pan with cooking spray and set aside.
Step 2
Cut onion into slices. Cut bell peppers into bite size pieces. Seed and dice the jalapeños. Set aside.
Step 3
In a bowl, add chopped, bite size chicken pieces and 2/3 cup of the Firebee BBQ Sauce together. Toss to coat and set aside to marinate for 15 minutes.
Step 4
Arrange sliced onion on sheet pan and top with marinated chicken pieces, bell peppers, and pineapple. Brush remaining Firebee BBQ Sauce on top and toss to coat. Sprinkle with jalapeño peppers. Season with salt and pepper.
Step 5
Bake, uncovered for 30-35 minutes, or until internal temperature of chicken reads 165 degrees. Serve and spoon sauce and juices over chicken. Great served over rice!
