Carrot Cake Cinnamon Rolls

A fun new take on traditional cinnamon rolls! These have carrot cake mix as part of the filling, as well as shredded carrots in the dough. Delicious! 


Yields 9 Servings
  • 1 c. whole milk
  • 1/8 c. unsalted butter
  • 4 c. all-purpose flour
  • 1/3 c. Firebee Cinnamon Honey
  • 1 tsp. salt
  • 1 egg
  • 1/4 c. shredded carrots
  • 1/2 c. carrot cake flavored cake mix
  • 1 tsp. cinnamon
  • 1/8 c. unsalted butter
  • 2 Tbsp. unsalted butter (room temperature)
  • 4 oz. cream cheese (room temperature)
  • 1/2 tsp. vanilla
  • 1 c. powdered sugar


Step 1

Make the rolls by mixing together the milk and butter and heating in the microwave until it reaches around 120 degrees. 

Step 2

Add 3 cups flour, yeast, Firebee Cinnamon Honey, and salt to a stand mixer and combine. Add in the milk and butter mixture and egg. Mix with the paddle attachment until a dough forms.  Continue adding flour, 1/4 cup at a time, until a soft dough forms.

Step 3

Continue mixing until the dough is smooth and elastic. Place in an oiled bowl and cover with plastic wrap. Put in a warm area to rise, about an hour.

Step 4

Grease a 9" x 13" pan and set aside. To make the filling, mix together the cake mix and cinnamon in a small bowl. Melt the butter and set both item aside.

Step 5

Punch down the dough and knead in the shredded carrot. Try to spread them throughout as evenly as possible. Roll the dough out into a 10" x 18" rectangle. 

Step 6

Brush the rectangle with the melted butter and then sprinkle with the cake mix and cinnamon mixture. Starting on the long side, roll the dough up and pinch the seam together. 

Step 7

Using a very sharp knife, cut the dough into 9 even slices. Place in the prepared baking pan and cover with plastic wrap. Allow to rise again for another hour.

Step 8

Preheat the oven to 350 degrees and bake for 20-25 minutes or until they are browned on top. Let them cool for about 10 minutes while you make the frosting. 

Step 9

To make the frosting, mix together the butter, cream cheese, and vanilla. Add in the powdered sugar a bit at a time until the appropriate consistency has been reach. Frost the cooled cinnamon rolls and enjoy!
