Cherry Ricotta Toast
This appetizer has it all - the sweet, the salty, the crunchy! Give it a try and you'll be pleasantly surprised!
Ingredients
- 1 Italian baguette, sliced into 12 slices
- 26 large, very ripe cherries
- 2 Tbsp. Firebee Elderberry Honey, plus more for drizzling
- 1 -1 1/2 c. ricotta cheese
Instructions
Step 1
Preheat your oven to 450 degrees Fahrenheit and line a sheet pan with foil, sprayed with non-stick cooking spray.
Step 2
Remove the stems from the cherries and toss them with the 2 tablespoons of Firebee Elderberry Honey. Do not remove the pits now, as it will release too much of the juices.
Step 3
Spread the cherries out on the sheet pan and bake for about 15 minutes or until the cherries start to wrinkle and the begin to release their juices.
Step 4
While the cherries are cooking, place the bread slices on another sheet pan so they are ready to go into the oven next.
Step 5
Whip the ricotta with a whisk or in a stand mixer until it is as creamy as desired.
Step 6
Remove the cherries from the oven and place the bread in to toast for about 4 minutes per side or until golden.
Step 7
While the bread is toasting, pit the cherries by making a small slit in the side. The pit should come right out.
Step 8
Spread some of the ricotta on the toast and top with 2-3 cherries. Drizzle with extra Firebee Elderberry Honey and enjoy!
