Chocolate Monkey Muffins

Banana muffins just got a make-over with these chocolate monkey muffins. Throw in some Firebee Chocolate Honey, coconut and chocolate chips and you have breakfast taken to a whole new level! 


Yields 30 servings

  • 2 c. all purpose flour
  • 2 c. whole wheat flour
  • 1/2 c. Firebee Chocolate Honey
  • 1/2 c. granulated sugar
  • 1 1/2 Tbsp. baking powder
  • 1 tsp. salt
  • 2 c. milk
  • 2 tsp. vanilla
  • 2 eggs
  • 1 c. canola oil
  • 2 ripe bananas, mashed
  • 3/4 c. sweetened  coconut
  • 1 c. chocolate chips + more for sprinkling


Step 1

Preheat oven to 400 degrees Fahrenheit and line your muffin pans.

Step 2

Combine the first 6 ingredients. Mix together the milk, vanilla, eggs, oil, and bananas carefully so it doesn't slosh.

Step 3

Combine the wet and dry ingredients together. Mix in chocolate chips. 

Step 4

Fill muffin cups about 2/3 of the way full and then sprinkle with coconut and more chocolate chips. 

Step 5

Bake for 20 minutes or until toothpick inserted comes out clean. Cool on wire rack.
