Cinnamon Zucchini Bread

Zucchini is a staple in so many gardens throughout the summer - this bread highlights it with a hint of cinnamon! 

Ingredients

Yields 8-10Servings
  • 2 c. shredded zucchini (skin on)
  • 2 c. all purpose flour
  • 2 eggs
  • 2/3 c. vegetable oil
  • 2/3 c. brown sugar, packed
  • 1/3 c. Firebee Cinnamon Honey
  • 2 tsp. vanilla
  • 1 1/2 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda

Instructions

Step 1

Preheat oven to 350 degrees and spray a bread pan with nonstick spray.

Step 2

Shred your zucchini using a grates and place into a large bowl. Add in the eggs, oil, brown sugar, Firebee Cinnamon Honey and stir to combine.

Step 3

Next, add the flour, salt, baking powder, baking soda, and cinnamon. Stir until just combined.

Step 4

Pour the batter into the prepared bread pan and bake for 45-50 minutes or until a toothpick inserted comes out clean.

Step 5

Allow the bread to cool for about 10 minutes before removing from the pan to finish cooling on a rack. 

Step 6

Serve bread warm or room temperature with a drizzle of extra Firebee Cinnamon Honey and butter.
