Cowboy Caviar

A chunky salsa full of southwestern ingredients that is great with chips or crackers!

Ingredients

Yields 12 servings
Caviar:
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 2 medium tomatoes, diced
  • 1 - 2.25 oz. can sliced black olives, chopped 
  • 1 avocado, diced
  • 1/2 medium red onion, diced
  • 1 red bell pepper, diced
  • 1/4 c. chopped cilantro
  • 1 jalapeno, diced, seeds removed
Dressing:
  • 1/4 c. lime juice
  • 2 Tbsp. Firebee Spicy Honey
  • 2 tsp. chili powder
  • 2 tsp. cumin
  • 2 tsp. salt
  • 1/3 c. oil

Instructions

Step 1

Combine all the caviar ingredients in a large bowl and toss to combine. 

Step 2

Combine the dressing ingredients together in a smaller bowl, whisking to combine. 

Step 3

Pour the dressing over the caviar and stir. Add additional salt if desired and serve immediately!
