Lemon Bars

These tart bars are fantastic and the filling is made with lemon honey in place of sugar, so you can feel better about eating a second one - or a third!

Ingredients

Yields 16 Servings
Crust
  • 2 c. flour
  • 1/2 c. sugar
  • 1/4 tsp. salt
  • 1 c. (2 sticks) butter, cut into small cubes
Filling
  • 1 c, Firebee Lemon Honey
  • 1/4 c. flour
  • 4 large eggs
  • zest and juice of 4 lemons
  • powdered sugar for dusting

Instructions

Step 1

Preheat the oven to 350 degrees Fahrenheit. Grease a 9" x 13" pan to bake the crust in.

Step 2

Stir together the flour, sugar, and salt. Add in the butter in small cubes, using a pastry cutter to mix it in. The crust should resemble fine crumbs. 

Step 3

Press it into the prepared pan and bake until golden around the edges, about 25-30 minutes.

Step 4

For the filling, stir together the Firebee Lemon Honey, and flour. Add in the eggs and whisk it all together to combine.

Step 5

Add the lemon zest and juice and mix until combined. Pour over the crust and bake for an additional 20 minutes.

Step 6

Allow the bars to cool in the fridge for at least a couple of hours and then sift with powdered sugar before cutting into squares.
