Italian Meatball Soup

A beautiful soup that comes together quickly with frozen meatballs and whatever pasta you have on hand! 

Ingredients

Yields 4 Servings
  • 1 pound frozen Italian meatballs
  • 1 Tbsp. vegetable oil
  • 1/2 medium onion, diced
  • 2 tsp. minced garlic
  • 1/2 red bell pepper, diced
  • 2 (14.5 oz) cans fire roasted tomatoes, diced
  • 4 c. beef broth
  • 1/2 tsp. Fuhgeddaboudit Seasoning
  • 1/2 tsp. crushed red pepper flakes
  • 2 c. rotini pasta
  • 1/4 c. fresh basil, chopped
  • salt & pepper to taste
  • 1/2 c. parmesan cheese, for serving
  • Italian bread -optional

Instructions

Step 1

In a large soup pan, add the tablespoon of vegetable oil and heat over medium heat. Cook the onion until translucent, about 5 minutes.

Step 2

Add in the garlic and cook until fragrant, about 30 seconds. Add in the diced tomatoes, beef broth, bell pepper, Fuhgeddaboudit Seasoning, red pepper flakes, and frozen meatballs. 

Step 3

Cook on medium heat until boiling, and  boil for about 15 minutes.

Step 4

After the soup has boiled, add in your pasta and cook for about 10 more minutes, or until the pasta is tender.

Step 5

Serve up your soup in bowls and top with parmesan cheese and freshly chopped basil. 

Step 6

Serve with crusty bread and enjoy!
