Mini Carrot Bundt Cakes

Carrot cake counts as getting a serving of veggies, right? 

These delicious mini cakes with cream cheese frosting are just the right amount for an afternoon snack or an after dinner dessert.

Ingredients

Yields 18 servings

  • 2 c. flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. ground allspice
  • 1/2 tsp. salt
  • 12 Tbsp. butter, melted
  • 1/2 c. applesauce
  • 3 large eggs
  • 2 tsp. vanilla
  • 1 c. brown sugar, packed
  • 1/2 c. Firebee Cinnamon Honey
  • 2 1/2 c. carrot, grated
Cream Cheese Frosting
  • 8 oz. cream cheese, softened
  • 4 Tbsp. butter, softened
  • 2 c. powdered sugar
  • 1 tsp. vanilla

Instructions

Step 1

Preheat the oven to 350 degrees and spray your mini bundt cake pan with nonstick spray. Set aside for later.

Step 2

In the bowl of a stand mixer, cream together the butter, Firebee Cinnamon Honey, applesauce, eggs, vanilla, and brown sugar. 

Step 3

Add in the dry ingredients - flour, baking powder, baking soda, salt, and spices and mix just until combined. Fold in the carrots with a spatula by hand to ensure you don't overmix.

Step 4

Fill each cavity in the bundt pan about 2/3 of the way full. Bake for about 10-12 minutes, or until a toothpick inserted in the center comes out clean. 

Step 5

Allow to cool for about 5 minutes before removing from the pan and refilling to finish your mini cakes. While those are cooling and the next batch is baking, go ahead and make your frosting    

Step 6

Combine all the frosting ingredients with a mixer. You can add additional powdered sugar if it is too runny, or add a tablespoon of milk if it's too dry. Frost the cakes when they are cool and enjoy!
