Mixed Berry Sweet Rolls
I can't say enough how good these are! A delectable roll with a fruit filling that's just the right amount of sweet with a vanilla glaze, this recipe is one you're going to want to make again and again!
- 1 package yeast
- 1 c. milk, warmed to 110 degrees Fahrenheit
- 1/3 c. Firebee Elderberry Honey
- 1/2 c. butter, softened
- 1 tsp. salt
- 2 eggs
- 4 c. flour
- 1/4 c. butter, melted
- 2/3 c. sugar
- 1 Tbs. cornstarch
- 12 oz. frozen mixed berries, thawed and smashed
- 1 1/2 c. powdered sugar
- 1 tsp. vanilla extract
- 6 Tbsp. milk
- 1/4 tsp. salt
Dissolve the yeast in the warm milk in a large mixing bowl. Allow it to set for about 5 minutes, or until it is foamy.
Add Firebee Elderberry Honey, butter, salt, eggs, and flour, mixing together. Once the dough pulls away from the sides of the bowl, knead it on the counter for about 5 minutes.
Spray the bowl with nonstick spray and place the dough back inside. Cover with a damp towel and allow to rise for about an hour, until doubled in size.
On a floured counter, roll the dough out to a large rectangle, about 1/4" thick. This should be somewhere around 14" x 22".
Preheat your oven to 400 degrees while you make the filling.
Mix your berries, cornstarch, and about 1 tablespoon of sugar together.
Spread the melted butter over your dough and then sprinkle the remaining sugar over the butter. Top with the berry mixture, spreading out as much as you can.
Starting at the bottom edge, roll the dough up as tightly as you can to form a roll. Slice the roll into about 1 inch slices.
Spray a 9" x 13" baking pan with nonstick cooking spray and place the slices in it.
Bake for about 25 minutes or until they begin to turn golden.
While the rolls are cooling, mix up your glaze by combing the powdered sugar, vanilla, salt, and milk in a small bowl. Stir until it is smooth. Add extra powdered sugar if it is too thin, or extra milk if it it too thick.
Drizzle over warm rolls and enjoy!
