Orange Creamsicle Cheesecake

Orange Creamsicle Cheesecake

A light and fruity dessert that doesn’t require you to turn on the oven? Sign me up! This no bake cheesecake brings the taste of an Orange creamsicle and combines it with cheesecake for a deliciously cool treat. 

Ingredients

Yields 8 servings

  • 11 oz. vanilla wafer cookies
  • 1/2 c. Firebee Sweeet Honey
  • 3/4 c. Sugar
  • 4 tsp. Melted butter
  • 16 oz. cream cheese, softened
  • 16 oz. heavy cream
  • 3.3 oz. box orange gelatin
  • 1 c. Boiling water
  • Zest from 1 orange
  • 1/4 tsp. Vanilla extract
  • 1/2 c. Powdered sugar

Instructions

Step 1

Grease bottom and sides of 9” springform pan. Crush vanilla wafers until they are finely crumbled. Add 1/2 c. Firebee Vanilla Honey and melted butter. Stir to incorporate.  Press mixture into the bottom and slightly up sides of the pan. Place in freeze for 30 minutes.

Step 2

Beat cream cheese and sugar until smooth. In a medium bowl, combine gelatin and boiling water. Whisk until dissolved and set aside.

Zest orange and set aside.

Step 3

Whip heavy cream, powdered sugar, and vanilla until stiff peaks form. Add 1/2 of whipped cream mixture to cooled gelatin and add orange zest. Whisk to blend. Set aside.

Step 4

Fold remainder of whipped cream mixture into cream cheese mixture. Spread 1/2 of the cream cheese mixture over the crust. Spread the remaining 1/2 of the mixture with the gelatin over the first 1/2.

Step 5

If desired, swirl the layers together with a knife. Refrigerate for at least 6 hours before serving.
