Parmesan Chicken Tortellini

Fuhgeddaboudit Seasoning really ties this whole meal together with an unforgettable flavor that will have your family asking for seconds and maybe even thirds! 

Ingredients

Yields 4 Servings
Chicken
  • 1 lb. boneless, skinless chicken breasts
  • 2 Tbsp. vegetable oil
  • 1/2 tsp. salt
  • 1/2 tsp. black
  • 1/2 tsp. Fuhgeddaboudit Seasoning
Sauce
  • 1 c. heavy cream
  • 1 c. half and half
  • 4 Tbsp. butter
  • 1 c. parmesan cheese
Topping
  • 1/3 c. panko breadcrumbs
  • 1/2 c. mozzarella cheese
1 bag frozen cheese tortellini

Instructions

Step 1

Pound chicken out to 1/2 inch thickness. Place the chicken, oil, salt, pepper, and Fuhgeddaboudit Seasoning into a large ziplock bag. Seal the bag and smash it around until the marinade is coating all of the chicken. Refrigerate for 30 minutes.

Step 2

In a large skillet, heat enough oil to cover the bottom of the skillet and saute the chicken. You will want to cook it about 7-8 minutes per side. Set it aside to rest while you prepare the sauce.

Step 3

In a medium saucepan, combine the cream, half and half, and butter until it is almost boiling. Add in the parmesan cheese and whisk. Cook the sauce on medium heat until it starts to thicken.

Step 4

Cook the tortellini according to package directions. Preheat your broiler while this is cooking.

Step 5

In a 9" x 13" baking dish, combine the cooked tortellini and sauce, tossing to coat. Slice the chicken and place on top of the tortellini. 

Step 6

Add the panko bread crumbs and mozzarella over the top and broil it for 3-4 minutes or until it is golden brown and bubbly.
