A delicious jalapeño coleslaw tops this pastrami sandwich, giving it a sweet and spicy crunch!
- 8 slices dark rye bread
- 2 Tbsp. butter
- 1 lb. thinly sliced pastrami
- 8 slices Swiss cheese
- Jalapeño Coleslaw
- 1 fresh jalapeño, deseeded and diced
- 3 Tbsp. apple cider vinegar
- 1 tsp. salt
- 1 Tbsp. Firebee Spicy Honey
- 1/4 c. mayo
- 1 bag prepared coleslaw mix
- 1 tsp. black pepper
Place the jalapeño in the vinegar while you start on the sandwiches and allow it to soak. Heat a skillet over medium heat. Spread butter on one side of each slice of bread.
Place a couple of slices in the hot skillet and top with 1 slice of Swiss cheese, each. Spread about 1/4 lb. of the pastrami over the cheese and top with another slice of bread. After about 3 minutes check to see if the bread is golden and flip it when it is. Allow to cook on the other side for another 3 minutes. You want the cheese to be melted and the meat to be heated through. Repeat with other sandwiches.
While the sandwiches are cooking, prepare your slaw. Add the jalapeños and vinegar to the prepackaged coleslaw mix, and add in the salt, Firebee Spicy Honey, mayonnaise, and black pepper. Stir around until everything is completely coated. Top each sandwich with the coleslaw mix and enjoy!
