Peach Honey Muffins

Peach muffins are the perfect breakfast treat! With the taste of peaches and the sweet goodness of a streusel topping, you have the taste of summer mixed with the taste of fall in one bite! 

Ingredients

Yields 12 servings
Muffins
  • 1  1/4 c. all purpose flour
  • 1  1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/3 c. Firebee Peach Honey
  • 1/3 c. white sugar
  • 15 oz. can sliced peaches, drained and chopped
  • 1/2 c. milk
  • 1 egg
  • 1/4 c. vegetable oil
  • 1 tsp. vanilla
Streusel Topping
  • 1/4 c. all purpose flour
  • 3 Tbsp. white sugar
  • 1/2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 4 Tbsp. cold unsalted butter


Instructions

Step 1

Preheat oven to 350 degrees Fahrenheit. Prepare a large muffin pan with 12 muffin liners.

Step 2

For the muffins: Add the flour, baking powder, salt, and sugar to a large bowl and whisk together to combine.

Step 3

Add the peaches and stir well to coat with the flour mixture.

Step 4

Add the milk, egg, oil, Firebee Peach Honey, and vanilla to the bowl and stir together with a rubber spatula just until combined.

Step 5

Portion the batter out into the muffin cups evenly, about 3/4 of the way full. 

Step 6

For the topping: Combine the flour, sugar, cinnamon, and baking powder in a small bowl and stir. Add in the cold butter in chunks and break it up with a fork until it resembles coarse crumbs.

Step 7

Sprinkle the streusel topping over the muffins evenly.

Step 8

Bake for about 20 minutes or until golden brown and a toothpick inserted in the center comes out clean. 

Step 9

Let cool on a wire rack and serve warm or cool.
