This cheesecake is rich and decadent with peppermint undertones, it's sure to be a crowd pleaser! Serve it at your next holiday party, but be sure to have the recipe handy, people will be asking!
- 22 Oreo Cookies
- 3 Tbsp. melted butter
- 1 Tbsp. sugar
- 16 oz. softened cream cheese
- 16 oz. heavy cream
- 1/2 c. Firebee Vanilla Honey
- 1/2 c. sugar
- 1/4 c. powdered sugar
- 1 tsp. peppermint extract
- 6 drops pink food coloring
Crush Oreos in the food processor and add melted butter and sugar. Press the mixture into the bottom and partway up the sides of a springform pan. Refrigerate for at least 30 minutes to firm it up.
Beat cream cheese, Firebee Vanilla Honey, and sugar until well mixed and set aside. Whip heavy cream and powdered sugar until stiff peaks form.
Fold and blend cream cheese mixture into the whipped cream mixture. Add food coloring and peppermint oil into the filling mixture.
Pour cheesecake mixture into pan and spread it around and refrigerate for at least 4 hours or until firm.
Garnish with crushed peppermint, whipped cream, and extra honey as desired.
