Pumpkin Chocolate Chunk Cookies
It's the season for pumpkin-everything, so we baked up a batch of chocolate chunk cookies and added pumpkin!
Ingredients
- 1 stick butter (1/2 cup), melted
- 1/2 c. light brown sugar
- 1/3 c. Firebee Pumpkin Spice Honey
- 1 large egg white, room temperature
- 1 tsp. vanilla
- 1/4 c. pumpkin puree
- 1 1/2 c. flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. pumpkin pie spice
- 1 1/2 c. semi-sweet chocolate chunks
Instructions
Step 1
Preheat the oven to 350 degrees and line a large baking sheet with parchment paper. Set aside.
Step 2
In the bowl of a stand mixer, add together the all the ingredients except for the chocolate chunks. Mix until the dough comes together and then fold in the chocolate chunks.
Step 3
Scoop out the dough into portions to make 18-20 cookies (about 2 inch scoops) and bake for 10 minutes, or until the edges are set and golden, but the center is slightly underbaked. Remove from the oven and allow to cool before serving.
