Sheet Pan Lemon Chicken

A healthy and delicious dinner made all in one pan! What can be better than that?


Yields 4 Servings
  • 4 boneless, skinless chicken breasts
  • 1 lb. baby potatoes, washed and cut into bite sized pieces
  • 1 lb. Brussels sprouts, halved
  • 4 Tbsp. olive oil
  • 2 tsp. garlic, minced
  • 1 Tbsp. brown mustard
  • 1 tsp. Firebee Raw Honey
  • juice of 1 lemon, divided
  • salt & pepper to taste


Step 1

Preheat the oven to 400 degrees and lightly oil a large sheet pan. 

Step 2

Mix together the mustard, garlic, Firebee Raw Honey, 1/4 tsp. salt, olive oil, and half the lemon juice. 

Step 3

Place the potatoes and Brussels sprouts on the sheets pan. Drizzle with about half the mustard mixture, turning to coat. 


Step 4

Season the vegetables with salt and pepper and arrange around the edges to allow space for the chicken.

Step 5

Season the chicken with salt and pepper and place on the sheet pan. Rearrange the vegetables if necessary to make room. Drizzle the chicken with the remaining mustard mixture. 

Step 6

Bake for 25 minutes, or until the internal temperature of the chicken reaches 165 degrees. Squirt the remaining lemon juice over the chicken and serve immediately.
