Spicy Chicken Taco Soup

Throw all of the ingredients except for the cheese in the Instant Pot and you have yourself a quick, easy, and delicious meal for those busy nights when the kids are back in school and you don't know what to cook for dinner. Don't worry, Firebee Spicy Honey has you covered!  

Ingredients

Yields 6 servings
  • 1/2 medium onion, chopped
  • 1/2 red bell pepper, chopped
  • 2 cans Ro-Tel diced tomatoes & green chilies with juices
  • 3 cups chicken broth
  • 1 tsp. garlic powder
  • 1 tsp. ground cumin
  • 1 tsp. smoked paprika
  • 1 Tbsp. chili powder
  • 1/4 c. Firebee Spicy Honey
  • 1 can corn, drained
  • 1 can black beans, rinsed and drained
  • 2 chicken breasts, uncooked
  • Salt & Pepper to taste
  • 1 - 8 oz. block of cream cheese, softened
  • Toppings (optional) - shredded cheese, avocado, cilantro, fresh tomatoes, tortilla strips, sour cream, etc.

Instructions

Step 1

Add all ingredients to the Instant Pot except for the cream cheese and toppings. 

Step 2

Seal the pot and cook on high for 8 minutes. 

Step 3

Let the pressure release for 5 minutes and then quick release the rest. 

Step 4

Shred chicken and stir in the cream cheese until completely melted. Spoon up into bowls and add toppings as desired. Enjoy! 

Alternate Crock Pot Recipe:

If making in the Crock Pot instead: Add chicken breasts on the bottom and then add all other ingredients except the cream cheese and optional toppings. Cook on low for 5-6 hours. Shred chicken with forks and add back to the crock pot. Add in cream cheese and stir until melted through. Spoon into bowls and add toppings as desired. Enjoy!
