Spicy Jack-O-Lantern Stuffed Peppers

Spicy Jack-O-Lantern Peppers

Treat your kids to a spooky dinner with these stuffed peppers. These peppers are easy to make and fun for the whole family. This hearty meal will keep them full while trick or treating all night long. 

Ingredients

Yields 6 Servings
  • 6 bell peppers
  • 1 lb. ground Italian sausage
  • 2 cups rice, cooked
  • 1 small onion, diced
  • 4 cloves of garlic, minced
  • 1 (14 oz.) can diced tomatoes 
  • 1 Tbsp. Italian seasoning
  • 1 Tbsp. balsamic vinegar
  • 1/4 c. Firebee Spicy Honey
  • 1 (2 lb.) package of cheese (we used Colby-Jack)
  • 2 Tbsp. olive oil
  • 1 Tbsp. parsley
  • Salt & Pepper to taste

Instructions

Step 1

Preheat oven to 420 degrees Fahrenheit. Heat two tablespoons of olive oil in a pan and add the diced onions and saute until soft and translucent. Add minced garlic and saute for another minute. 

Step 2

Add the ground Italian sausage and break up the meat and brown it well. Add the Italian seasoning, balsamic vinegar, Firebee Spicy Honey, and diced tomatoes. Season with salt and pepper and stir everything together.

Step 3

Add the cooked rice and stir well. Add half the cheese to the rice along with the parsley and mix in. Turn off the heat. 

Step 4

Cut the tops off the peppers and clean out the insides and the lids. Create a Jack-O-Lantern designs of your choice on the bell peppers.  

Step 5

Stuff the Jack-O-Lantern peppers with the rice and sausage mixture and top with cheese. Place the lids back on and bake at 420 degrees Fahrenheit for 15-20 minutes or until the cheese is melted and the peppers are to your desired softness.
