Spicy Summer Corn Salad
This salad is full of garden fresh ingredients like corn, tomatoes, and basil. It has a bright, refreshing taste that is easy to prepare and is the perfect side dish for any BBQ or even a weeknight dinner!
Ingredients
- 4 ears of corn on the cob, cleaned and washed
- 1 pint of grape tomatoes, halved
- 8 oz. fresh mozzarella, cut into bite sized pieces
- 10 basil leaves - roll leaves and slice thinly
- 1/4 c. Lemon juice
- 1/4 c. Olive oil
- 2 tbsp. Firebee Spicy Honey
- 2 cloves garlic, minced
- 1/2 tsp. Salt
- 1/2 tsp. Pepper
Instructions
Step 1
Remove the corn from the cob with a knife or corn stripper. Add to a large bowl. (No need to cook the corn, you can serve it raw in this salad)
Step 2
Cut the grape tomatoes in half or thirds depending on the size and add to the bowl.
Step 3
Add the mozzarella and basil to the bowl.
Step 4
Add all dressing ingredients together in a bowl and whisk together. Pour over salad ingredients.
Step 5
Toss the salad ingredients with the dressing until completely coated and serve.
