Tuscan Chicken Pasta

This dish seems like it would be a lot of work, but it was very easy to put together and will WOW your family with just how delicious it is. The right seasonings really made a dish like this stand out! 

Ingredients

Yields 4 Servings
  • Chicken
  • 4 boneless, skinless chicken breasts
  • 1 c. flour
  • 1/2 c. panko bread crumbs
  • 1 Tbsp. garlic powder
  • 1 Tbsp. Fudgeddaboudit Seasoning
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. basil
  • 1/2 tsp. oregano
  • 2 Tbsp. vegetable oil
Sauce
  • 2 Tbsp. butter
  • 2 tsp. minced garlic
  • 1 red bell pepper, sliced into strips
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. paprika
  • 2 Tbsp. flour
  • 1 c. chicken broth
  • 1 c. milk
  • 1/2 c. half and half
  • 2 c. fresh spinach, roughly chopped
  • 1 c. parmesan cheese

  • 1 lb. fettuccine

Instructions

Step 1

Preheat oven to 400 degrees and prepare a baking dish with nonstick spray. 

Step 2

In a shallow dish, combine the flour, Panko, garlic powder, Fuhgeddaboudit Seasoning, salt, pepper, basil and oregano. Coat the chicken completely with the seasonings. 

Step 3

In a large skillet, heat your oil until nice and hot. Place the chicken into the pan, making sure not to knock off the seasoning. Cook on each side for 2-3 minutes or until golden, only flipping once.

Step 4

Place the chicken into the baking sheet and put into the oven for 15-20 minutes or until 165 degrees is reached. 

Step 5

While the chicken is baking, cook your fettuccine according to the package directions. Drain and set aside. (You can put in a bit of oil and mix to keep the noodles from sticking together)

Step 6

While the chicken and noodles are cooking, make your sauce. Add the butter to the same skillet you used for the chicken. Once it has melted, add the bell pepper and cook for 3-4 minutes or until tender. Season them with the salt, pepper, and paprika. Add the garlic and saute until fragrant. 

Step 7

Add the flour and whisk until combined. Add the chicken broth, milk, and half and half. 

Step 8

Bring the mixture to a simmer and then add the spinach, cooking until it is wilted, about 5 minutes. Stir in the parmesan cheese and whisk until smooth. Remove from heat and add pasta.

Step 9

Serve pasta and top with sliced chicken. You can top with extra parmesan and Fuhgeddaboudit Seasoning.
