Vanilla Honey Butterscotch Cookies

These cookies are the perfect, hearty treat. Packed with delicious Vanilla Honey, oats, and butterscotch these cookies are sure to have you coming back for a second (or third!) 


  • 2 cups all purpose flour
  • 1 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon 
  • 1 cup unsalted butter (room temperature)
  • 3/4 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup Firebee Vanilla Honey
  • 2 large eggs
  • 1 tsp vanilla extract 
  • 3 cups old fashioned oats
  • 11 oz butterscotch chips

Step 1

Preheat oven to 375 degrees F. Line baking sheets with parchment paper.

Step 2

Whisk together flour, baking soda, salt, and cinnamon in a medium bowl.

Step 3

In a separate bowl or stand mixer, beat butter, brown sugar, and granulated sugar until creamy.

Step 4

Slowly add the honey, vanilla, and eggs to butter mixture until well combined 

Step 5

Beat together flour and butter mixtures until just combined.

Step 6

Gently stir in butterscotch chips and oats.

Step 7

Roll batter into tablespoon sized balls and place two inches apart on lined baking sheet.

Step 8

Bake for 9-11 minutes, or until edges are golden and the middle is set, but moist.

Step 9

Cool cookies for a few minutes on the baking sheet, then transfer to cooling rack. ( Be careful- they are soft!)

Step 10

Add an extra drizzle of Firebee Honey if desired, let cool, and enjoy!
